The inference is that blood sugars become too high for too long after eating white rice. Key here is the volume. Rice is made of starch which in the body converts to sugar very quickly. This in turn may put a strain on the pancreas of a person at risk of Type 2 diabetes because it may lead to blood sugar levels being too high for too long. In the long-term this is bad because it causes damage to the arteries leading to the well known complications of diabetes such as eye, heart, kidney and nerve disease and damage.

Any other starches which also absorb into the body quickly can do this, as examples any food made from refined flour such as white bread, cakes or biscuits. The same argument could also apply to eating too much simple refined sugar at one go such as drinking some brands of fizzy drinks which can contain up to 8 to 10 teaspoons of sugar in one can.
