That olive oil contains certain health benefits is clear enough for nutritional studies to have to be designed taking this knowledge into account. Extra virgin olive oil appears to confer particular benefit. This is thought to result from the effects of a multitude of antioxidants polyunsaturated compounds within virgin oil. Olive oil is predominantly a monounsaturated fat but it also has relatively high amounts of polyphenolic compounds. It is these and other antioxidant components which are particularly rich in extra virgin olive oil compared to commercial olive oil.
